1 medium butternut squash (peeled, deseeded and cut into chunks)
1 small potato (peeled and diced)
2 garlic cloves (peeled and crushed)
900ml vegetable stock

1.Place pan over a low heat. With a drizzle of water to sweat. Add the onion and cook for 1-2minutes..
2.Increase the heat to medium, add the butternut squash and potato and sweat for 2 minutes. Add the garlic and season lightly. Pour in the stock and simmer for 25minutes..
3.Using a blender, blend the mixture until smooth. (preference) Then Serve.
