Boil potatoes for 35minutes then mash, adding a spoonful of butter and a splash of milk to bind.
Sweat off your leaks in a little oil.
Add leeks to mash along with, mustard, garlic, cheese and seasoning.
Shape into sausages.
Lightly dust with flour, cover in egg.
Roll in breadcrumbs.
Oven bake at 180’ 30 minutes or until golden.
Serve with vegetables of choice.
