Chicken stock (gravy granules to thicken)
Butternut squash (or potatoes)
Large diced carrots
Large diced parsnips

Oven bake chicken 60 minutes 180’ in chicken stock (add gravy granules when cooked).
Mix up all the large diced vegetables and season to your requirements, drizzle with oil and mix up to coat all vegetables - oven bake until soft and tender.
Par boil potatoes for 10 minutes place on a tray drizzle with oil, oven roast on high temp 200’ 60 minutes.
Or, oven roast Butternut Squash roasties at 180’ for around 60 minutes.
Plate up chicken, spoon on your mixed veg, roast potatoes.
Cover slightly with chicken stock/gravy to taste.
