Mix flour and salt add fat cut into small pieces.
Stir with a knife (do not rub in) mix into a stiff paste.
Roll out onto floured surface, to a narrow strip.
Fold in three, turn one of the open ends towards you and roll out again - repeat 3 times.
Cover pastry and leave to rest for 15minutes.
Roll to desired shape.
Allow pastry to rest for 30 minutes in the fridge.
