Place diced onion into a shallow pan and sweat off with butter and oil. Add risotto rice keep stirring. Gradually add your vegetable stock, and wild mushrooms keep stirring, adding stock as its absorbed. Risotto should appear sticky not sloppy. Add a handful of parmesan cheese season with your black pepper and serve.
