Grill streaky bacon, turning to crisp evenly.
Toast bread.
Cut avocado in half, scoop out flesh from one half and mash up with a fork.
Poach egg in boiling water or using a poaching pan, or if you don’t feel confident poaching an egg simply boil an egg to your liking, quickly run under cold water and peel off the shell.
Spread the smashed avocado onto the toast, add the bacon rashers and finish with the poached egg or boiled egg cut in half.
