Smashed Avocado on Toast with Poached EggsFind Your Calm
2 slices wholemeal Bread
Sea salt and pepper
1 tbsp Olive oil
Fill a large pan with water and bring to the boil. Cut the avocado in half and scoop out the flesh into a bowl (disregard stone). using a fork, roughly smash the avocado, until chunky but spreadable.
Now poach the eggs in the pan of boiling water for 2-3 minutes..
Toast 2 slices of bread whilst eggs are poaching.
Spread the smashed avocado on the toast, Place poached eggs on top, season with salt and pepper to serve..
