Takes , serves people. pan on medium heat. With a light drizzle of olive oil. 2. Add the sliced onion and fry for 10minutes.. 3. Add a splash of water, r- cover and steam for a further 10 minutes.. 4. Cut the potato into slices and add to the pan. 5. Beat the eggs, season and pour into the pan. Evenly.. 6. Cover and cook on a low heat for around 10 minutes. Until the egg is almost set.. 7. Turn the omelette and cook for a further 2 minutes. Serve hot or cold with plenty of green veg or salad of choice.. omelette
