Takes , serves 1 people.

Score skin along the back of Sea Bass, season with sea salt.. Dust with flour to help crisp when cooking.. Pan fry in high heat with a little oil skin side down for few minutes then turn over and repeat.. Wash then finely chop your leaks.. Pan fry in a little butter and oil sweat off until nice and soft.. Add large handful of peas then season with sea salt and black pepper and your grated nutmeg (optional).. Add cream to bind.. Serve with potatoes of choice..
